Stats shows that the 2-test series in West Indies, where pitches were batting friendly, India scored less than 3.00 and batted for longer period of time. Not the same in South Africa where the surface was conducive to bowling, there Indian batsmen threw their wickets away while looking for boundaries regularly!.
India could have grinded and batted out each session. It only suggests on surface that is conducive they would rather get out of the situation than face it. i.e bat long hours.
